The opportunity to diversify the variety of seafood species in the supply chain is becoming an increasingly important seafood solution strategy for businesses trying to increase profitability and improve their sustainability efforts. On both the Canadian and U.S. Pacific coasts, excellent seafood options continue to be underutilized and undervalued in the market. In many cases the catch can be far less than even half of the available quota with fish being sold for less than $1/lbs. Conversely, the reliance on imports has at the minimum remained steady and in many cases has increased when looking at overall percentage of seafood consumption. This panel of suppliers, chefs, and industry experts will explore the opportunity to purchase lesser-known seafood species caught closer to home, the related nutritional and health benefits of eating a variety of seafood, which will reward local fisheries as well as provide a great tasting seafood item at a value price point for seafood businesses.
